Your top-selling item might be your worst performer.
Volume does not equal profit. The item moving 80 times a day could have a contribution margin that is dragging your COGS up every single service. Most operators do not know which 20% of their menu is doing 80% of the heavy lifting.

Mobile events, catering, buyouts, and room rentals are frequently priced on intuition rather than actual cost of goods and labor. We price them on your numbers, not industry rules of thumb.

Pull the data
We start with your POS and your actual cost of goods.
We pull your sales mix from your POS system (Square, Toast, Clover, whatever you run) and your cost data from your accounting system. We want to see what is selling, what it costs to produce, and what it is contributing to your gross profit. Actual numbers, not estimates.

Map the menu
Every item gets sorted by volume and margin.
Stars earn a high margin and sell a lot. Plowhorses sell a lot but at thin margin. Puzzles have high margin but low volume. Dogs have both problems. Most operators know intuitively which items feel like problems. The data shows which ones actually are, and the picture is usually different from what you expect.

Build the recommendations
Specific price changes, cuts, and layout moves.
We give you a clear list: which items to reprice and by how much, which items to cut or replace, which items to feature more prominently, and where your off-premise pricing needs to change. Every recommendation is tied to a specific dollar impact. We do not hand you a framework. We hand you a set of decisions.

Measure the result
We track what the changes actually did.
After implementation, we look at the numbers again. Did COGS move? Did the mix shift toward higher-margin items? Did average check move up? Did guest counts hold? The only repricing that matters is one you can measure. We measure it.
