About Petrichor CFO
Our Story

Great operators are everywhere. The ones who build real wealth also understand their numbers.

We've spent our careers on both sides of this industry, in kitchens and in the books. Petrichor CFO exists because operators who understand their numbers don't just survive. They build something worth holding onto.

Breaking bread is one of the most human things people do.

People mourn over food. They celebrate over it. The mom who finds a few quiet moments in a cup of coffee while her kids ricochet around her. The couple at the corner table celebrating an anniversary they'll still talk about in twenty years.

You don't just serve food. You hold space for those moments.

No matter what anyone is doing, they're celebrating with food and drinks. We love that about this industry. It's why we've spent our careers inside it, and it's why we built Petrichor CFO.

"Accounting tells you where you've been, based on every decision you've already made. Finance asks: if you change what you're doing, where does that take you? Most operators in this industry only get the first half."

Running a restaurant well is one of the hardest things in business. You can fill every seat, earn the reviews, build a loyal following, and still wonder at the end of the year where the money went. That exhaustion is real, and it is not a failure of effort. It is a gap in financial visibility.

The operators who build real margins are not necessarily working harder than everyone else. They have closed that gap. They know their trends before those trends become problems. They understand which levers to pull, and they make financial decisions proactively instead of reactively. They are operating with both halves of the picture.

That is the version of this industry we want more operators to experience. Petrichor CFO is how we get them there.

Chad Sheeks
Co-Founder, Fractional CFO

Chad started busing tables at 13. Over the next fifteen years he worked every position you can name: line cook, server, bartender, sous chef, general manager, across quick service, hotel catering, corporate chains, and upscale brew pubs. He didn't study this industry. He lived it.

He left the floor with degrees in economics and finance from the University of Nebraska, moved into financial services, then joined Xero as their West Coast customer experience lead, consulting CPA firms and troubleshooting accounting operations across the country.

He eventually bought a restaurant with his brother. Ran it. Sold it. Came back to the finance side with something most CFOs never get: the ability to read a P&L through an operator's eyes.

Jackie Kraft, Co-Founder of Petrichor CFO
Jackie Kraft
Co-Founder, Controller

Jackie built her accounting career in industries that don't forgive mistakes: transportation, insurance, and corporate law. In each one, the environments were complex, the stakes were high, and precision wasn't optional. She built a reputation for being the person who finds what everyone else missed.

Transportation meant tracking fleet costs and fuel margins with no room for error. Insurance meant managing agent teams and overseeing work comp audits across high-volume books of business. Corporate law meant trust accounting and high-stakes compliance, where a single miscalculation has consequences. That's where she met Chad.

At a national restaurant accounting firm, all of it converged. Jackie brought a level of rigor to restaurant finance that the industry rarely sees. She reads every line. She builds process where there isn't any. She asks the questions operators often don't know to ask, then delivers numbers that are actually useful. The financial clarity our clients experience starts with her.

The restaurants-fail narrative is missing half the story.

42%
of restaurants reported making no money last year (National Restaurant Association)

The typical pre-tax margin in this industry runs 3 to 5%. Most operators already know that.

But the operators who get their numbers right consistently reach 10 to 15% net income. On a $2,000,000 restaurant, every percentage point is $20,000. Move five points and you've found $100,000 you didn't know you were leaving behind.

The difference between those operators and everyone else isn't luck, location, or concept. It's financial visibility. That's the gap we close.

It had been raining.

We were brainstorming names and kept coming back to the same question: what do we actually care about? Watching businesses grow. Watching operators who pour everything into their concept finally get the financial footing to match their effort. The mentorship. The partnership. Helping people build something that lasts. It was raining that day.

Petrichor is the word for the smell after rain hits dry earth. Specific, unmistakable, and tied to one thing: something is about to grow. That's the firm.
